Pancakes and Home made Syrup

Even Adrian helps.Today for lunch we made pancakes.  Here is Momma’s home made recipe for pancake mix.  It is from the More with Less Cookbook Oma gave her when she married Daddy.  She says it is her favorite cookbook.

Pancake Mix Cooking the pancakes

6 cups white flour

3 cups whole wheat flour (or buckwheat, cornmeal or rye flour)

3 cups quick oats

2 cups wheat germ

The pancakes!1 Tablespoon salt

3/4 cup baking powder

3/4 cup sugar (you can use a little less if you want)

4 cups powdered milk

Mix all these ingredients well and store in an airtight container.  When you want to make pancakes, combine 1 1/2 cups pancake mix with one beaten egg, 1 cup water and 2 tablespoons oil.  It makes enough for 3 or 4 people.  We double the recipe and sometimes need more!Eating the pancakes

Remember when we made maple syrup?   When we opened it, we discovered it was not quite boiled down enough.  So we reboiled it the other day.  We went down from 4 pints to 2 and Daddy said it could have been boiled more.  Momma stopped so it would not go down to sugar.  The syrup tasted good!Reboiled syrup

I want to boil syrup again next year.  We already have the tubing.  Hint for boiling it inside–Use a dehumidifier!

Journey Cakes

Journey CakesWe made Journey Cakes (or jonny-cakes) today.

here is how:

  • 1 cup corn meal
  • 1 tsp salt
  • 1 Tbl Maple Syrup or Honey
  • Boiling water
  • Bacon grease

BakingPour corn meal into a bowl with salt and maple syrup.  Add enough water to make a stiff dough.  Drop onto greased pan and bake for about 6 minutes per side.  Serve with maple syrup.

A couple days ago I made goooooood ( x 1000000000) food!

We call this Potato Samosas.  Instead of meat they have potatoes.  Maryam taught us how to potatoes.JPGmake them, but I forgot their real name.

To make

  1. Peel pototoes, cook and mash.  Add salt and pepper to taste and a very finely diced onion. Maryam grated it all.
  2. Cut wonton wrappers at a slant. Unless you want really big ones.  See example below 🙂fry

  3. Smear water over 1/2 of a wonton wrapper so it can seal.   Make sure you hit at the edges!
  4. Cover half the wonton wrapper with mashed potatoes.
  5. Fold and seal the wonton wrapper
  6. Deep fry until bubbly.
  7. Cool
  8. Eat them warm! (They don’t taste as good cold, but you can eat them cold.)

  9. Deep fry some plain wrappers and add cinnamon sugar!  They taste like elephant ears!

Pumpkin

Audrey and Adrian’s pumpkinA couple days ago, Mom and the two younger ones went to Nature Nuts. This time it was pumpkins! They carved a pumpkin and got the seeds and all the gook in it.  Almost no body else wanted their seeds.  Miss Krista was going to dump them out to the animals, but she said that we could have them!

CleaningWe cleaned the seeds a couple of days ago.  We took the stringy stuff out of it for the compost pile.  The seeds we washed and put in the refrigerator. The good pumpkin stuff we cooked it. We did lots of stuff with it!Gooky job!

So today we made some pumpkin seed snacks!  We boiled the seeds for about 10 minutes.  Then we put some of them on a pan and made three different seasoning. Audrey and Andrea used 2 Tablespoons of butter and 2 teaspoons of Worcestershire sauce. Audrey put lots of Mrs Dash lemon pepper on and some garlic powder and a tiny bit of salt.  Andrea used Lawry’s Seasoning Salt. I usedSeasoningAndrea cooking 2 Tablespoons butter with sugar, cinnamon, cloves, and allspice. I did not measure mine, just added till it tasted good.

Then you put it in a 350 degree oven for about 1/2 hour.  They were brown and crunchy.  We stirred them occasionally.  Be careful that you don’t get burnt!  We had between six to eight cups of pumpkin seeds before we ate three cups! 🙂

Our house smells like pumpkin!  If you want your house to smell like pumpkin spice, I would recommend doing this!

“Pakavrah”

Today I learned a new recipe. I wanted to cook, an ez “Indian” recipe and there was nothing that I could think of. I asked Maryam; she taught me how to make “Pakavrah”.The batter should be runny

Here it is..
Deep frying the potatoes
water (about half a bowl)
1/2 baby spoon ground turmeric
1/2 baby spoon garlic powder
3 hand fulls flour
1 baby spoon salt
3 potatoes, deskin them and cut them up into humongous penny type things or pancakes.

Put oil on the “pany-pan-pan” 🙂 Turn on the oven to “lite hi” put the potatoes in the mixture. Deep fry them, not to burnt, but a bit burnt. Take them out.

Taste them when cooled.Eat them!!!!!!!!!!!! 🙂 (After they cool down!)

I have only tried them plain, but Maryam told us about it and Momma likes them with tasteless yogurt. They are yum, yum, yum, yummy!

Yummy Cookie Recipe

IngredientsYummy Oatmeal Cookies

About 3 dozen, but that depends on how much dough you eat.

 

 

3/4 cup butter softened (1 and 1/2 sticks)Don’t cry over spilt milk

1 cup brown sugar

1/2 cup sugar (we used 1/4 cup)

1/4 cup milk

1 tsp vanilla extract

1 cup soft white flour (you can use all purpose if you want)Add baking soda, measure carefully!

1 tsp cinnamon (we use a little more)

1/2 tsp baking soda

1/4 tsp salt

2 3/4 cups oatmeal (we used quick oats, but you can use any kind)

1/4 cup wheat germ (but you can use another 1/4 cup oatmeal)

1 cup chocolate chips (we used half dark chocolate M&M’s too) Put it over the brim a bit and eat the ones on top.“Snitch some chocolate chips while adding”

1/2 cup raisins

1/2 cup dried cranberries

1/4 tsp secret ingredient (optional)

Lots of love!

Wash your hands with soap and aqua! Do it again! 🙂 So you get all the junk off of them.

This is what the dough should look likeCombine butter, brown and white sugars, (snitch right after you cream in the sugar and brown sugar) milk, egg (wash your hands again) and vanilla and secret ingredient if you know it. Beat until light and fluffy. Mix in salt, cinnamon, baking soda, and flour. Stir well. Add oatmeal, raisins and candy. Snitch some dough before you bake them.

Drop by teaspoonfuls onto baking sheet (greased). You can roll them in sugar if you want, or put M&M’s on top.

Bake for 12 to 15Ask Momma for help if oven is hot! (This is still cold) minutes at 350 degrees Fahrenheit. Momma usually puts them in the oven; it could burn you if you get too close. Watch that they don’t get too brown.ctsp.jpg

Let Momma take them out. (Audrey says, “or Daddy”)Cool on wire rack and then eat them ! 🙂 Freeze some or share them.

Andrea said, “we share some and let someone help us eat them.”

Let Daddy snitch some cookies when they are done and still warm. Don’t let Momma, because she will eat too many, especially with the chocolate chips and M&M’s.

Make sure when you are all done You clean it all up! Or your Momma may not let you bake again.
